Mango & Coconut Chia Seed Pudding

Enjoy this pudding for breakfast, post-workout, run or as an afternoon ‘pick-me-up’ snack.


Serves 2

1/4 cup chia seeds

1 1/2 cup of coconut milk from a can

1 ripe fresh mango, peeled and sliced

2 tablespoons of chopped fresh coconut meat

2 teaspoons of cacao nibs (can be omitted)



Pour the chia seeds and coconut milk into a container that has a lid, stir, cover and set in the fridge overnight.

In the morning:

Stir the chia seed pudding and add a little milk if you want a creamer consistency.

Spoon 2-4 tablespoons of chia seed pudding into each bowl/glass jar.

Layer with mango.

Spoon another 2-4 tablespoons of chia seed pudding on top of the mango.

Layer with another layer of mango.

Sprinkle over the coconut meat and cacao nibs.
